Sweet potatoes, in our opinion, should be given an award for one of the healthiest foods you can eat! They’re loaded with all kinds of healthy nutrients and are considered nutrient-dense, as they are packed with fiber. Fiber helps to keep your stomach full and decreases your ability to overeat. This is super helpful for weight loss! Additionally, the vitamins and minerals sweet potatoes contain, aid in the functionality of your body.

Sweet potatoes are rich in vitamin A, which helps with keeping your eyes healthy. They’re also packed with Vitamin C, which is responsible for keeping your body’s immune system healthy (think about how people take Vitamin C supplements to prevent or treat a cold!). The Vitamin D in sweet potatoes contributes to healthy bones. The list is still going! Sweet potatoes are high in antioxidants (that help fight off cancer cells), are beneficial in boosting brain function, and GREAT for diabetics, because sweet potatoes are slowly absorbed in the bloodstream, unlike regular potatoes that give you a sugar spike.  

Clearly, we’re big fans of the sweet potato. In honor of our meal prepping video series, where we featured a sweet potato stuffed with rotisserie chicken, we wanted to share a few more of our favorite stuffed sweet potato recipes with you!


01 Sweet Breakfast Sweet Potato

Ingredients: Nut Butter, Berries, Hemp seeds Cacao Nibs

Berries and peanut butter are a delicious (and healthy) combo, so let’s take it a step further and add them to a sweet potato. This sweet goodness of a breakfast will be sure to keep you satisfied, and spice up a boring breakfast routine!


02 Mexican Style Sweet Potato

Ingredients: Avocado, Black Beans, Tomatoes, Peppers, Chipotle Ranch

Mexican style sweet potatoes are going to replace your Taco night this week, trust us! We used avocado, black beans, tomatoes, peppers, and a healthy, homemade chipotle ranch to spice up our sweet potato!


03 Savory Breakfast Sweet Potato

Ingredients: Eggs, Avocado, Roma Tomatoes, Bacon

We gave you a sweet breakfast option, now we want to give you a savory option, too! This sweet potato is stuffed with all the breakfast goods: scrambled eggs, bacon, sliced avocado, and Roma tomatoes! Your stomach (and soul) will be so satisfied.


04 Chili Style Sweet Potato

Ingredients: Ground Turkey, Black Beans, Corn, Peppers, Cheddar Cheese, Sour Cream

Here is another great savory option! We are topping this potato with ground turkey (it’s leaner than ground beef) with black beans, corn, peppers, cheddar cheese, and sour cream. This is sure to be a crowd pleaser.


05 Veggie+Cheese Stuffed Sweet Potato

Ingredients: Feta or Gouda Cheese + Kale or Spinach with Bacon Bits

This recipe is the healthier version of a loaded baked potato. We’ve added some feta and gouda cheese with kale and bacon bits to make ourselves one tasty, loaded sweet potato! YUM.
