Try staying in this year with our healthy date night meals for two!

Who doesn’t love breakfast for dinner? Slip into your coziest pajamas and pick out your favorite board game to accompany our favorite Egg and Spinach Bake and Berry Parfait combo! Or, roll out the red carpet to dinner and a movie with our cauliflower pizza and a fresh green salad. What’s a movie without popcorn? It’s time to turn popcorn into a dessert by drizzling dark chocolate over the top and adding a sprinkle of sea salt. More of an adventure seeker? Breakfast + Board Games

Egg + Spinach Bake:
Yields 6 servings | Total Time: 45 mins. | Prep Time: 10 mins. | Cook Time 30 mins.

Ingredients:

  • 5 oz. organic fresh spinach (4 cups packed)
  • 2 tsp. olive oil
  • 1 1/2 cups shredded mozzarella
  • 8 eggs, beaten
  • Salt and pepper (to taste)

Directions:

  1. Preheat oven to 375℉.  Spray an 8 1/2 inch by 12-inch glass or casserole dish with olive oil or nonstick spray.
  2. Heat the oil in a large frying pan, add spinach all at once, and stir just until the spinach is wilted (about 2 minutes). Transfer spinach to the casserole dish, spreading it around so all the bottom of the dish is covered. Layer the grated cheese on top of the spinach.
  3. Beat the eggs and salt and fresh ground pepper to taste.  Pour the egg mixture over the spinach/cheese combination, and then use a fork to gently “stir” so the eggs, spinach, and cheese are evenly combined.
  4. Bake about 35 minutes, or until the mixture is completely set and starting to lightly brown. Let cool about 5 minutes before cutting.  (The egg bake will settle down some as it cools.) Serve hot.

Greek Yogurt Berry Parfait
Yields 2 servings | Prep Time: 5 mins

Ingredients:

  • 1 1/2 cup Cinnamon Honey Bunches of Oats
  • ⅔  c strawberries
  • ⅔  c blackberries
  • ⅔ c blueberries
  • 1 ½ c nonfat Greek yogurt

Directions:

  1. In a glass or bowl, layer half of the yogurt, strawberries, blackberries, and cereal.
  2. Repeat for a second layer.
  3. Enjoy!

Dinner + Movies

Cauliflower Pizza
Yields 2 servings | Prep Time: 10 mins | Cook Time: 30 mins

Ingredients:

  • Frozen cauliflower pizza crust (we used from Trader Joe’s
  • Pizza sauce
  • 1 ball fresh mozzarella
  • 1/2 T. minced garlic
  • 1/2 cup shredded mozzarella
  • 2 steak tomatoes
  • Fresh Basil

Directions:

  1. Bake pizza crust according to box instructions. 2. Add pizza sauce and minced garlic. Spread the sauce evenly around the crust, leaving the edge of the crust showing. Sprinkle the shredded mozzarella onto the sauce.
  2. Slice the tomatoes and mozzarella and place on top. Add basil for garnish.
  3. Heat pizza in oven until cheese is melted. Enjoy!

Fresh Green Salad
Yields 3 servings | Prep Time: 3 mins

Ingredients:

  • Fresh greens of your choice (we went for a mix)
  • 1/3 c. grated parmesan cheese
  • Freshly squeezed lemon juice from 1/2 lemon
  • 1 tsp. salt
  • 1 tsp. cracked black pepper
  • 2 tsp. olive oil

Directions:

  1. Add greens and Parmesan to a large mixing bowl.  Drizzle evenly with olive oil and lemon juice, and sprinkle with salt and black pepper.  Toss until fully coated.
  2. Garnish with extra Parmesan and serve immediately.

Dark Chocolate Drizzled Popcorn
Yields 4 servings | Prep Time: 5 mins | Cook Time: 5 mins

Ingredients:

  • Microwaveable popcorn
  • Dark chocolate melting chips
  • Sea Salt

Directions:

  1. Pop popcorn and set aside to cool.
  2. Melt chocolate chips in a microwave-safe bowl, stopping to stir every 30 seconds, being careful not to burn the chocolate mixture. (Pro-Tip: Add 1 T. of coconut oil to aid in consistency).
  3. Spread popcorn on a baking sheet and drizzle chocolate on top.
  4. Sprinkle sea salt for added flavor.
  5. Toss popcorn to better coat with chocolate.
  6. Allow to sit at room temperature for 30 minutes for chocolate to set.
  7. Enjoy!

Feast + Forts

Salmon Foil Packets
Yields 2 servings | Prep Time: 5 mins |  Cook Time: 35 mins

Ingredients:

  • 2 salmon fillets
  • 1/2 lemon sliced
  • 1 bunch of asparagus
  • 4 garlic cloves
  • Salt and pepper to taste

Directions:

  1. Tear 2 large rectangles of tin foil and place olive oil in the center of each one.
  2. Place half of the asparagus onto the foil.
  3. Place the salmon fillet skin side down on top of the asparagus, and add a drizzle of olive oil to the top.
  4. Add 2-3 slices of lemon on top of the salmon.
  5. Arrange lemon slices and rosemary on top of the salmon.
  6. Add 2 garlic cloves.
  7. Wrap the foil and place on a baking sheet.
  8. Bake at 375ºF for 30-35 minutes.
  9. Serve in foil immediately.

Baked Apples in Tin Foil
Yields 2 servings | Prep Time: 5 mins | Cook Time: 30 mins

Ingredients:

  • 2 Granny Smith apples, sliced
  • 1/2 c. brown sugar
  • 2 tsp. Cinnamon
  • 2 dashes of nutmeg
  • 1 T. butter

Directions:

  1. Tear 2 pieces of foil that are about 12×18 inches and stack them on top of each other.
  2. In a small bowl, combine brown sugar, cinnamon, and nutmeg, set aside.
  3. Place apples on the center of the foil and sprinkle on brown sugar mixture, using only enough to lightly coat apples. Break butter over apples. Fold up packets ensuring a tight seal.
  4. When ready to cook, place the sealed packet in the oven at 375ºF and bake for 30 minutes.
  5. Remove packet from oven and pierce with knife or fork to allow steam to escape. Unfold packets and enjoy!
